I've got a device I can recommend (if you're taking recommendations). It's a DLink DNS 323. Headless, runs an embedded Linux. I bought one, popped in 2x320 gb SATA drives, set 'em up for RAID 1 (it'll also do RAID 0/JBOD, but it looked like you were looking for security over size), and was off and running as soon as it was done setting up the mirror.
Out of the box, you can set up network shares via SMB (SAMBA) or FTP. It is also hackable (did I mention that it runs Linux :) ), and you can set up AFS and other handy things relatively easily (I've not gotten around to setting up AFS yet, as Leopard plays pretty well with SMB, but I do have a Subversion repository set up). You can also set up an iTunes server with a point and click as well, so you can centralize all of the Dr. D.
There are also other bells and whistles that come with it, as well as some that they advertise that don't work or don't work right. You can get a bare device for $179 from NewEgg. But, with 500 gb SATA drives going for next-to-nothing these days, it's a really inexpensive insurance policy.
